Prepare Peach Purée

Blend Peach
Place the diced white peach in a blender or small food processor. Add 0.25 oz of the lime juice (reserve the rest for balance) and 0.25 oz simple syrup. Pulse until you have a smooth, slightly pulpy purée (about 10–15 seconds). If purée is very thick, add 1 teaspoon water and pulse once more.

Strain the purée through a fine-mesh strainer into a small bowl or measuring cup, pressing with the back of a spoon to extract about 2–3 tablespoons of silky peach purée. Discard solids left in the strainer.
Build the Cocktail

In a cocktail shaker, add the strained peach purée, remaining 0.5 oz lime juice (0.75 oz total lime used: 0.25 in purée, 0.5 in shaker), all lemon juice, ginger syrup, remaining 0.25 oz simple syrup, and the white rum.

Add a large handful of ice to the shaker (enough to chill quickly). Secure the lid and shake vigorously for 10–12 seconds to chill, dilute, and integrate the peach purée and syrups.

Fill a rocks glass or short Collins glass with crushed ice (about 1 cup).

Garnish with a thin white peach slice fanned on the rim and a sprig of mint tucked into the ice (if using). Optionally, grate a small ribbon of fresh ginger over the top for extra aroma.

Serve immediately with a short straw. Encourage the drinker to gently smash the garnish slice into the ice or stir to release more peach aroma as they sip (hence 'Peach Smash').
