Ginger syrup

Make ginger syrup
Combine the sliced fresh ginger, granulated sugar, and water in a small saucepan. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Reduce heat and simmer 5–7 minutes to infuse a pronounced ginger flavor. Remove from heat and let steep for 20 minutes. Strain the syrup through a fine-mesh sieve, pressing on the ginger to extract flavor. Cool to room temperature. Refrigerate in a sealed container; syrup will keep 2 weeks. You will use about 3 tablespoons for the cocktail.

Prepare passion fruit
If using fresh passion fruit, cut fruits in half and scoop the pulp (seeds + juice) into a measuring cup until you have about 3/4 cup. If pulp is very seedy and you prefer less seed, press pulp through a coarse strainer, reserving juice and some pulp. Keep seeds if you like texture.

Mix base
In a cocktail shaker or large jar, combine 3/4 cup passion fruit pulp, 3 tablespoons ginger syrup, 3 tablespoons fresh lime juice, 2 tablespoons fresh orange juice, and 6 ounces light rum. If using bitters, add 2 dashes now. Add one cup of crushed ice (reserve remaining crushed ice for serving).

Shake or stir
Secure the shaker and shake vigorously for 10–15 seconds, or, if using a jar, shake until well chilled. If you prefer a lightly textured drink, gently stir for 10 seconds instead of shaking.

Build and finish
Divide crushed ice between two short highball or rocks glasses. Strain the shaken mixture evenly into the prepared glasses over the crushed ice. Top each glass with about 2 ounces (approx. 1/4 cup) chilled club soda or sparkling water to add lift. Give a gentle stir to integrate.
