Raspberry Swirl

Make the raspberry purée
Combine raspberries, granulated sugar, water, and lemon juice in a small saucepan or microwave-safe bowl. If using a saucepan, warm gently over low heat for 2–3 minutes, stirring, until sugar dissolves and raspberries begin to break down. If microwaving, heat 30–45 seconds and mash. Remove from heat.

Strain the warmed raspberry mixture through a fine-mesh sieve into a small bowl, pressing with the back of a spoon to extract as much purée as possible. Discard seeds. Allow purée to cool to room temperature (about 5–10 minutes). The purée should be pourable but slightly thick to hold a swirl.

Blend the mango base
In a high-speed blender combine the mango chunks, tropical juice, coconut milk, simple syrup (or honey), fresh lime juice, ice, and a pinch of salt. Blend on high until very smooth and slightly frothy, about 30–60 seconds. Taste and adjust sweetness with up to 1 additional tablespoon simple syrup if needed.

If the mixture is too thick to pour, add 1–2 tablespoons more tropical juice or coconut milk and pulse to combine. You want a thick slush — pourable but able to hold a swirl of purée.
Assembly

Chill serving glasses in the freezer for 5 minutes if desired. Pour a thin ribbon (about 1–2 tablespoons) of the raspberry purée into the bottom of each glass and tilt the glass to coat the interior slightly for a decorative effect, reserving the remainder for swirling.

Carefully pour the mango slush into the glasses, filling about 90% full. Spoon or drizzle additional raspberry purée over the top in a spiral pattern.

Use a toothpick or small spoon to gently swirl the raspberry purée through the top layer of the mango drink to create marbled ribbons. Avoid overmixing so the swirl remains visible.

Garnish with a fresh mango slice and a mint sprig. Serve immediately with a straw and a small spoon.
