Boil pasta and blanch broccoli
Bring a large pot of water to a rolling boil. Add 1 tsp kosher salt. Add spaghettini and cook according to package directions until just shy of al dente (usually 1–2 minutes less than package time). With 2–3 minutes remaining on the pasta, add broccoli florets to the pot to blanch until bright green and tender-crisp. Reserve 3/4 cup of the starchy cooking water, then drain pasta and broccoli together and set aside. Do not rinse.

Prepare tomatoes
While pasta cooks, halve the cherry tomatoes and set aside. They will be added to the sauce briefly so they soften but retain shape.

Sear shrimp
Heat a large (12-inch) skillet over medium-high heat until hot. Add 1 tablespoon olive oil. Add shrimp in a single layer and sear 1–1.5 minutes per side until pink and just cooked through. Do not overcook. Remove shrimp to a plate and tent loosely with foil.

Deglaze and build sauce
Pour in 1/2 cup dry white wine (or chicken broth) to deglaze the pan, scraping up any browned bits from the bottom with a wooden spoon. Let the liquid simmer briskly 1–2 minutes to reduce slightly.

Add tomatoes and combine
Add the halved cherry tomatoes and cook 1–2 minutes until they begin to soften and release juices.

Finish sauce
Stir in the reserved 3/4 cup pasta cooking water and 1 tbsp lemon juice. Bring to a gentle simmer. Reduce heat to low and whisk in 3/4 cup grated Parmesan a little at a time until a smooth, slightly thickened sauce forms. If sauce seems too thin, simmer a minute; if too thick, add additional reserved pasta water, 1–2 tbsp at a time, to reach desired consistency. Taste and season with salt to taste and 1/4 tsp freshly ground black pepper.

Combine pasta, broccoli and shrimp
Add the drained spaghettini and blanched broccoli to the skillet and toss gently to coat in the sauce. Return the seared shrimp (and any accumulated juices) to the pan and toss until shrimp are warmed through, about 1 minute. Stir in 2 tbsp chopped parsley and adjust seasoning (lemon, salt, pepper) as needed.
