Preparation

Measure beans
Weigh 10 g (about 1 heaping tablespoon or 0.0625 cups) of whole coffee beans for a single 8 fl oz cup. If using pre-ground, measure 2 tablespoons.

Heat water
Heat 8 fl oz of filtered water to 195–205°F (90–96°C). If you don't have a thermometer, bring to a boil and let rest 30 seconds.

Preheat and rinse
If using a paper filter or pour-over dripper, place filter in the dripper and pour 2 fl oz of hot water through it into the server or mug to rinse paper taste and preheat the vessel. Discard rinse water.
Grinding (if using whole beans)

Grind to medium-fine
Grind the measured 10 g of whole beans to a medium-fine grind (slightly finer than drip, coarser than espresso) appropriate for pour-over or drip machines. Aim for a texture similar to sand. Transfer grounds to the filter or brew basket.
Brewing

Bloom
Place the grounds in the pre-rinsed filter. Pour about 20–30 ml (roughly 0.7–1 fl oz) of the hot water evenly over the grounds to saturate them. Let bloom for 30–45 seconds to allow CO2 to release and enhance extraction.

Continue pour
After bloom, slowly pour the remaining water in a controlled circular motion over the grounds, keeping the water level steady. Aim to finish pouring by 2:30–3:00 minutes total brew time. Total brewed coffee should be about 8 fl oz in the server or mug.

Final drawdown
Allow the water to fully drain through the grounds. Total contact time (from first pour to final drawdown) should be about 2:30–3:30 minutes for pour-over. If using a drip machine, run a full cycle.
Serve

Remove the dripper or filter. Swirl the server or stir gently to homogenize the cup. Pour brewed coffee into a preheated cup.

Discard used grounds and rinse dripper, filter holder, and server. Wipe any spills and store beans in an airtight container away from light and heat.
