Make herbed butter
Soften the unsalted butter at room temperature until spreadable (about 20–30 minutes). In a small bowl, mix softened butter with the chopped chives, lemon zest, 1/4 tsp sea salt and 1/4 tsp ground black pepper until evenly combined. Shape into a log on plastic wrap, roll tightly, twist ends, and refrigerate for at least 30 minutes before slicing to serve.
Marinated Olives

Prepare olives
In a small bowl combine mixed olives with 2 tbsp extra-virgin olive oil, 1/2 tsp sea salt, 1/4 tsp ground black pepper, and 1/4 tsp crushed red pepper flakes. Toss to coat and let marinate at room temperature for 30 minutes. Transfer to a serving dish; can be made 1 day ahead and refrigerated (bring to room temperature before serving).
Savory-Sweet Mustard Marmalade

Combine marmalade condiment
In a small bowl whisk together orange marmalade, Dijon mustard, whole-grain mustard, honey, and the remaining 1/2 tsp sea salt and 1/2 tsp ground black pepper until smooth. Taste and adjust sweetness or tang — add an extra 1/2 tsp honey or 1/2 tsp mustard as preferred. Serve at room temperature alongside breads or cheeses.
Roasted Cherry Tomatoes with Garlic & Basil

Warm tomatoes
If tomatoes are not already roasted, spread 2 cups cherry tomatoes on a baking sheet, toss with 1 tbsp olive oil, a pinch of salt and pepper, and roast at 400°F (200°C) for 12–15 minutes until blistered. In a small skillet warm 1 tbsp olive oil over medium heat, add the sliced garlic and cook 30–45 seconds until fragrant (do not brown). Add the roasted tomatoes and 1 tbsp balsamic vinegar, stir to combine and heat through for 1–2 minutes. Remove from heat and fold in torn fresh basil. Transfer to a serving ramekin.
Whipped Goat Cheese Spread

Make goat cheese spread
In a bowl or food processor combine 4 oz soft goat cheese, 1/2 cup plain Greek yogurt, 1 tsp lemon juice, 1 tsp maple syrup and 1/4 tsp cracked black pepper. Whip until smooth and airy (about 1–2 minutes in a processor or vigorously by hand). Taste and adjust seasoning with salt if needed. Transfer to a small bowl and chill briefly or serve immediately with a drizzle of olive oil and a sprinkle of chopped chives.
