Cheese Preparation and Coating

Cut cheese
Chill both Havarti and fontina in the refrigerator for at least 30 minutes to firm up. Slice each cheese into 8 equal rectangular sticks (approximately 1/2" x 1/2" x 3"). Pat dry with paper towels to remove any surface moisture.

Set up dredging stations
Place the flour in a shallow bowl and season with 1/2 tsp salt and 1/2 tsp black pepper. In a second shallow bowl, whisk together the eggs and whole milk until smooth. In a third wide bowl, combine the grated Parmesan, dry breadcrumbs, chopped parsley, garlic powder, remaining 1/2 tsp salt, and remaining 1/2 tsp black pepper; mix thoroughly.

Triple-coat the cheese
Working one piece at a time: roll a cheese stick in seasoned flour, tapping off excess. Dip into the egg wash, letting excess drip away. Press into the Parmesan-breadcrumb mixture so the coating adheres evenly. For a stronger crust, repeat the egg wash and breadcrumb press for a double coat. Place coated pieces on a baking sheet lined with parchment. Once all pieces are coated, freeze on the tray for 20–30 minutes to set the coating and reduce melting during frying.
Vodka Sauce

Stir in the tomato paste and cook, stirring, 1–2 minutes to caramelize slightly. Add the crushed tomatoes, red pepper flakes, sugar (if using), and 1 tsp salt. Bring to a gentle simmer, reduce heat to low, and simmer, uncovered, 10 minutes to thicken and meld flavors.

Turn heat to low–medium, carefully add the vodka and simmer 2–3 minutes to cook off alcohol. Reduce heat to low and stir in the heavy cream. Simmer gently 3–4 minutes until sauce is smooth and slightly thickened. Taste and adjust seasoning. Stir in sliced basil just before serving and keep warm on the lowest heat or in a very low oven (200°F / 95°C).
Frying and Finishing

Heat oil: Pour 1 1/2–2 cups neutral oil into a heavy cast-iron skillet or medium saucepan to a depth of about 1". Heat over medium-high until oil reaches 350°F (175°C) on a thermometer. If you don't have a thermometer, test with a small breadcrumb — it should sizzle and brown in ~30 seconds.

Fry the cheese: Remove a few coated cheese sticks from the freezer. Fry in batches (do not overcrowd) 3–4 pieces at a time for 45–75 seconds per side, turning once, until coating is golden brown and crisp. Aim for a total fry time of about 1.5–2 minutes; avoid overbrowning. Use a slotted spoon or spider to transfer fried cheese to a wire rack set over a baking sheet to drain and keep crisp. If pieces puff or distort, lower heat slightly; if coating browns too quickly, reduce temperature.

Finish and serve: Spoon a generous bed of warm vodka sauce onto each serving plate. Arrange 3–4 pieces of crispy fried cheese on top of the sauce. Garnish with extra grated Parmesan, chopped parsley, and a basil leaf. Serve immediately with lemon wedges on the side (a quick squeeze brightens the richness).
