Candied pecans

Line a small baking sheet with parchment and set aside.

In a medium skillet over medium heat, melt 1 tablespoon unsalted butter. Add 1 cup pecan halves and toss to coat for 1 minute.

Sprinkle 2 tablespoons granulated sugar, 1 teaspoon ground cinnamon and a pinch of salt over the pecans. Continue to cook, stirring constantly, until sugar melts and coats the nuts and aroma is fragrant, about 2–3 minutes.

Transfer pecans to the prepared sheet, spreading them into a single layer to cool; break apart if needed. Cool completely (about 10–15 minutes). Reserve 1/4 cup for garnish and coarsely chop the rest for folding into batter/swirl as directed.
Cinnamon swirl

In a small bowl, combine 1 cup packed light brown sugar, 2 teaspoons ground cinnamon and 3 tablespoons softened unsalted butter.

In a large bowl, whisk together 2 cups all-purpose flour, 2 tablespoons granulated sugar, 2 teaspoons baking powder, 1 teaspoon baking soda, and 1 teaspoon fine salt.

In a separate bowl or large measuring cup, whisk 2 cups buttermilk, 2 large eggs, 4 tablespoons melted cooled butter and 1 teaspoon vanilla extract until combined.

Make a well in the dry ingredients and pour the wet ingredients in. Stir gently with a spatula until just combined. A few small lumps are fine; do not overmix. If batter is very thick, add up to 2 tablespoons additional buttermilk to reach a pourable but thick consistency.

Fold in about 1/2 cup of the coarsely chopped candied pecans into the batter, reserving the rest for topping.
Cook & assemble pancakes

Heat a large nonstick skillet or griddle over medium heat until hot (about 350°F if using a thermometer). Lightly grease with butter or neutral oil.

For each pancake, pour about 1/4 cup batter onto the skillet. After roughly 30–45 seconds when small bubbles form on the surface and edges look set but top is still wet, spoon about 1 to 1 1/2 teaspoons of the cinnamon-brown sugar swirl onto the pancake.

Use the back of the spoon or a toothpick to gently swirl the cinnamon mixture into the top few millimeters of the batter (do not overmix or fully incorporate; you want visible swirls).

Cook until bubbles on the surface have popped and edges look set, about 1–1.5 minutes more. Flip and cook the other side until golden brown, 45–60 seconds. Transfer finished pancakes to a warm oven (200°F) on a baking sheet to keep warm while you cook remaining pancakes.

If swirl mixture spreads too much, reduce amount or refrigerate swirl briefly to firm up before spooning.
Honey butter & serve

While pancakes cook, make honey butter: in a small bowl, beat 4 tablespoons softened unsalted butter with 2 tablespoons honey until smooth and slightly whipped.
