Cherry-Lime Base

    Make cherry purée

    Place pitted fresh cherries and granulated sugar in a small bowl or mortar. Mash thoroughly with a muddler or the back of a spoon until the cherries release their juices and the sugar is dissolved, creating a slightly chunky purée (about 1–2 minutes).

    Combine citrus

    Add the fresh lime juice and lime zest to the cherry purée and stir to combine. Taste and, if you prefer sweeter, stir in up to 1 teaspoon simple syrup. This creates a bright, balanced cherry-lime concentrate.

Assemble & Serve

    Prepare glass

    Fill a tall glass (or two smaller glasses) about three-quarters full with crushed ice.

    Add base

    Spoon or pour half of the cherry-lime purée into the glass (approximately 2–3 tablespoons per serving if making two servings). Reserve the remainder for the second glass or for topping.

    Top with soda

    Slowly pour chilled club soda over the purée and ice, about 1 cup per serving, to preserve fizz. Gently stir once with a bar spoon to lift the purée into the soda without flattening it.

    Garnish and finish

    Garnish with a lime wheel or wedge on the rim and a maraschino or fresh cherry dropped into the drink. Clap the mint leaves between your palms to release aroma and tuck them in as an optional garnish. Serve immediately while fizzy.
