Method

Rice

  1. 1

    Rinse rice

Place 1 cup brown rice in a fine-mesh sieve and rinse under cold running water, stirring with your hand, until the water runs mostly clear (about 30–45 seconds). Drain well.

  2. 2

    Optional soak

Optional: To shorten cooking time and improve texture, transfer rinsed rice to a bowl, cover with water by about 1 inch, and soak for 20–30 minutes. Drain before cooking. If you skip soaking, proceed to next step.

  3. 3

Combine and bring to a boil

In a medium saucepan with a tight-fitting lid, combine the rinsed (and drained) rice, 2 1/4 cups water, and 1/2 tsp salt. Stir once to distribute, then bring to a gentle boil over medium-high heat, uncovered.

  4. 4

    Simmer gently

As soon as the water reaches a steady boil, reduce heat to low so the liquid is at a gentle simmer. Cover the pan tightly with the lid and cook undisturbed for 40–45 minutes (20–25 minutes if rice was soaked), or until the water is absorbed and rice is tender. Do not lift the lid while cooking.

  5. 5

    Steam off heat

Remove the pot from the heat. Keep the lid on and let the rice steam for 10 minutes; this allows grains to finish cooking and fluff up evenly.

  6. 6

    Fluff

After steaming, remove the lid and gently fluff the rice with a fork to separate the grains.

Optional finishing

  1. 7

Stir in 1 tablespoon unsalted butter or olive oil and 1 tablespoon chopped parsley or green onions, if using. Taste and adjust salt if needed. Serve warm.
