    Wash and hull

    Place the strawberries in a large colander and rinse under cool running water for 20–30 seconds, gently moving them so all surfaces are rinsed. Drain well and pat dry with paper towels. Trim the green caps and tough core (hull) with a paring knife; leave smaller berries whole and halve or quarter larger berries so pieces are roughly uniform bite-sized.

    Sweeten and macerate

    Put the prepared strawberries in a medium bowl. Sprinkle the granulated sugar and lemon zest (if using) over the berries, then add the lemon juice. Gently toss with a large spoon or spatula until all berries are lightly coated. Let the strawberries sit at room temperature for 10–15 minutes to macerate, stirring once after 5–7 minutes so juices distribute evenly. Taste and add up to an additional 1 teaspoon sugar if you prefer sweeter berries.

    Plate and garnish

    Spoon the macerated strawberries into individual serving bowls (about 1/2 cup strawberry mixture per serving). Add a dollop (about 2 tablespoons) of crème fraîche or yogurt alongside or on top of each bowl. Sprinkle the torn mint leaves over the strawberries. If using, add a very small pinch of coarse black pepper to each serving to enhance flavor (optional). Serve immediately.

    Storage note: If not serving right away, refrigerate covered up to 24 hours. Juices will continue to develop; stir gently before serving.
