Preparation of Shrimp

Marinate the Shrimp
In a large bowl, combine the shrimp with olive oil, minced garlic, paprika, cayenne pepper, salt, and black pepper. Mix well to coat the shrimp evenly and let marinate for at least 30 minutes.

Melt the Butter
In a small saucepan over medium heat, melt the unsalted butter until it starts to foam. Be careful not to burn it.

Corn Succotash

Cook the Vegetables
In a large skillet, heat olive oil over medium heat. Add the diced red onion and sauté until translucent, about 3 minutes.

Add Corn and Peppers
Add the fresh corn, red bell pepper, and green bell pepper to the skillet. Season with salt and black pepper. Cook, stirring occasionally, until the corn is tender, about 5-7 minutes.
Grilling the Shrimp

Grill the Shrimp
Place the marinated shrimp on the grill and cook for 2-3 minutes on each side, or until they turn opaque and are cooked through.

On a serving plate, arrange a portion of corn succotash, top with grilled shrimp, and drizzle with beurre meunière sauce. Garnish with crumbled queso fresco and fresh parsley.
