Preparation of Tri Tip

    Season the Meat

    Rub the tri tip with olive oil, salt, and black pepper. Ensure it is evenly coated.

    Braised Cooking

    Preheat the oven to 300°F (150°C). Place the seasoned tri tip in a roasting pan and cover it tightly with foil. Braise in the oven for 2.5 to 3 hours, until tender.

    Remove the tri tip from the oven and let it rest for 15 minutes before slicing.

Roasting Bell Peppers

    Prepare the Peppers

    Wash and slice the bell peppers into strips.

    Roast the Peppers

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the bell pepper strips and sauté for about 10 minutes until they are tender and slightly charred.

Chimichurri Aioli

    Mix the Aioli

    In a bowl, mix together the chimichurri sauce and mayonnaise until well combined. This will serve as the chimichurri aioli.

Assembling the Sandwich

    Slice the Bread

    Cut the Cuban bread pieces in half lengthwise.

    Layer the Ingredients

    On the bottom half of each bread piece, layer sliced tri tip, roasted bell peppers, a slice of Swiss cheese, and a handful of arugula.

    Spread the chimichurri aioli generously on the top half of the bread before closing the sandwich.
