Pie Crust

Buttermilk Dressing

Mixed Greens

Method

Pie Crust

  1. 1

    Prepare the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Cut in the unsalted butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

  2. 2

    Add Ice Water

Gradually add ice water, 1 tablespoon at a time, mixing until the dough comes together. Avoid overworking the dough.

  3. 3

    Chill the Dough

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

  4. 4

    Roll Out the Dough

On a floured surface, roll out the chilled dough to fit a 9-inch pie pan. Transfer the dough to the pan, trimming any excess.

Filling

  1. 5

    Caramelize the Onions

In a skillet, heat olive oil over medium heat. Add sliced onions and cook, stirring occasionally, until caramelized, about 20-25 minutes.

  2. 6

    Prepare the Tomatoes

Slice the heirloom tomatoes and sprinkle them with salt. Let them sit for about 10 minutes to release some moisture.

  3. 7

    Layer the Filling

Spread the caramelized onions evenly over the pie crust. Layer the sliced heirloom tomatoes on top, followed by the white cheddar cheese and chopped fresh basil. Season with black pepper.

Buttermilk Dressing

  1. 8

    Mix the Dressing

In a small bowl, whisk together buttermilk, mayonnaise, apple cider vinegar, garlic powder, salt, and black pepper until smooth.

Mixed Greens

  1. 9

    Prepare the Salad

In a large bowl, combine mixed greens, lemon juice, olive oil, salt, and black pepper. Toss gently to coat the greens.

Assembly and Baking

  1. 10

    Bake the Pie

Preheat the oven to 375°F (190°C). Bake the pie for 30-35 minutes or until the cheese is melted and bubbly and the crust is golden brown.

  2. 11

    Serve

Allow the pie to cool for a few minutes before slicing. Serve warm with the mixed greens and buttermilk dressing drizzled on top.
