Grits Preparation

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Add 1 cup of grits and 1 teaspoon of salt. Reduce heat to low and cook, stirring occasionally, for about 20-25 minutes until the grits are thick and creamy.

    Add Cheese and Butter

    Once the grits are cooked, remove from heat. Stir in 2 tablespoons of butter and 1 cup of white cheddar cheese until melted and well combined. Set aside and keep warm.

Shrimp & Sausage Preparation

    Sauté the Sausage

    In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add 8 ounces of sliced andouille sausage. Cook until browned, about 5-7 minutes.

    Add the Holy Trinity

    To the skillet, add 1 cup each of diced green bell pepper, onion, and celery. Sauté for about 5 minutes until the vegetables are softened.

    Incorporate the Garlic and Green Chili

    Stir in 3 cloves of minced garlic and 1 diced green chili. Cook for an additional 2 minutes until fragrant.

    Cook the Shrimp

    Add 1 pound of peeled and deveined shrimp to the skillet. Sprinkle with 1 tablespoon of cajun seasoning and 1 teaspoon of black pepper. Cook for 3-5 minutes until the shrimp are pink and cooked through.

    Plate the Dish

    To serve, spoon a generous portion of the creamy cheddar grits onto a plate and top with the shrimp and sausage mixture. Garnish with sliced green onions.
