Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

Combine Wet and Dry Mixtures
Pour the wet ingredients into the dry ingredients. Stir gently until just combined, being careful not to overmix. Fold in the seasonal fruit.

Cook Pancakes
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, then flip and cook until golden brown, about 2-3 minutes per side.

Cook Bacon
While the pancakes are cooking, place the bacon slices in a skillet over medium heat. Cook until crispy, about 4-5 minutes on each side. Remove and drain on paper towels.
Serving

Stack the pancakes on a plate, add crispy bacon on the side, and top with whipped butter. Drizzle with maple syrup and serve with classic preserves.
