Cooking Quinoa

Rinse the Quinoa
Place 1 cup of quinoa in a fine-mesh strainer and rinse under cold running water for about 2 minutes. This helps remove the natural coating that can make it taste bitter.

Cook the Quinoa
In a medium saucepan, combine the rinsed quinoa with 2 cups of water and 1 teaspoon of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.

Chop the Vegetables
While the quinoa is cooking, dice the cucumber, halve the cherry tomatoes, and tear the spinach into smaller pieces. Cut the avocado in half, remove the pit, and slice it into thin wedges.
Assembling the Bowl

Combine Ingredients
In a large bowl, fluff the cooked quinoa with a fork and add the spinach, cucumber, and cherry tomatoes. Drizzle with olive oil and lemon juice, and season with salt and black pepper. Toss gently to combine.

Top the quinoa mixture with the sliced avocado and crumbled feta cheese. Serve immediately.
