Method
Pimento Cheese Preparation

Combine Ingredients
In a large mixing bowl, combine sharp cheddar cheese, cream cheese, pimentos, mayonnaise, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

Mix Well
Use a hand mixer or a spatula to mix until all ingredients are well combined and the mixture is creamy. Adjust seasoning with salt and black pepper to taste.

Chill
Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow flavors to meld.
Labna Preparation

Prepare Labna
In a mixing bowl, combine plain yogurt and salt. Mix well.

Strain Yogurt
Place a fine mesh strainer over a bowl and line it with cheesecloth. Pour the yogurt mixture into the strainer and let it drain in the refrigerator for at least 4 hours or overnight until thickened.
Sourdough Toast Preparation

Toast Bread
Preheat your oven to 400°F (200°C). Arrange sourdough slices on a baking sheet and spread butter on each slice.

Bake
Bake in the preheated oven for about 10-12 minutes, or until the bread is golden and crispy. Remove from the oven and let cool slightly.
Assembly

Assemble the Plate
On each slice of toasted sourdough, spread a generous amount of pimento cheese. Top with a dollop of labna and a spoonful of chow chow.

Add Country Ham
Place a slice of country ham on top of the assembled toast.

Serve immediately as an appetizer or snack.
