Carefully crack each egg into a small bowl, then gently slide them into the boiling water one at a time. Poach for 3-4 minutes until the whites are set but the yolks remain runny.

While eggs are poaching, toast the English muffins until golden brown.

Assemble the Benedict
Place a toasted English muffin half on a plate, top with a generous portion of lump crab meat, then place a poached egg on top.

Brown the Butter
In a small saucepan, melt the butter over medium heat. Continue cooking until the butter turns golden brown and has a nutty aroma. Remove from heat and let it cool slightly.

Season the Hollandaise
Season with salt and cayenne pepper. Set aside and keep warm until ready to serve.
