Prepare Burger Patty

Season the Beef
In a mixing bowl, combine the wagyu beef with salt and black pepper. Mix gently to incorporate the seasoning without overworking the meat.

Divide the seasoned beef into two equal portions and shape them into patties, about ¾ inch thick.
Make Granddam Sauce

Mix the Sauce Ingredients
In a small bowl, combine mayonnaise, ketchup, Dijon mustard, garlic powder, smoked paprika, salt, and black pepper. Whisk until smooth and well blended.
Cook the Burger

Add Cheese
After flipping, place a slice of American cheese on each patty and cook for an additional 4-5 minutes or until the cheese is melted and the burger is cooked to your desired doneness.
Assemble the Burger

Prepare the Buns
Toast the brioche buns lightly on the grill or in a toaster.

Spread a generous amount of Granddam sauce on the bottom half of each bun. Place the cooked burger patty with melted cheese on each bun, followed by a slice of heirloom tomato and lettuce. Top with the other half of the bun.
