Chicken Marinade

    Prepare the Marinade

    In a large bowl, combine buttermilk, salt, black pepper, garlic powder, and onion powder. Whisk until well combined.

    Marinate the Chicken

    Add the chicken breasts to the buttermilk mixture, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for best results.

    Prepare the Coating

    In a separate bowl, mix together flour, paprika, cayenne pepper, baking powder, salt, and black pepper.

    Coat the Chicken

    Remove the chicken from the marinade, letting excess buttermilk drip off. Dredge each piece in the flour mixture, ensuring an even coat. Set aside on a wire rack.

Fry Chicken

    Cook the Bacon

    In a large skillet, cook the smoked bacon over medium heat until crispy, about 5-7 minutes. Remove and set on paper towels to drain.

    Heat the Oil

    In a large pot or deep fryer, heat oil to 350°F (175°C).

    Fry the Chicken

    Carefully place the coated chicken breasts into the hot oil. Fry for about 6-8 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C).

    Remove the fried chicken from the oil and place on a wire rack or paper towels to drain excess oil.

Assembly

    Spread pimento cheese on the bottom half of each brioche bun. Place a fried chicken breast on top, followed by two slices of crispy bacon and a generous amount of house pickles. Top with the other half of the bun.
