Preparing the Wagyu Brisket

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Season the wagyu brisket generously with salt and black pepper. Place the brisket in the smoker and smoke for about 6-8 hours, or until it reaches an internal temperature of 195°F (90°C). Remove from the smoker and allow to rest for at least 30 minutes before slicing.

Making the Granddam Sauce

    Combine Ingredients

    In a medium bowl, mix together the mayonnaise, Dijon mustard, horseradish, Worcestershire sauce, garlic powder, onion powder, salt, and black pepper. Adjust the seasoning to taste. Cover and refrigerate until ready to use.

Assembling the Reuben

    Build the Sandwich

    Heat a skillet or griddle over medium heat. Take two slices of rye swirl bread and spread a generous amount of Granddam sauce on one side of each slice. Layer on slices of smoked wagyu brisket, followed by a handful of sauerkraut, and top with Swiss cheese. Place another slice of rye bread on top, sauce side down.

    Grill the Sandwich

    Butter the outside of the sandwich lightly. Place it on the skillet and cook for about 4-5 minutes per side, or until the bread is golden brown and the cheese is melted. Press down gently with a spatula to help it grill evenly.

    Remove the sandwich from the skillet and let it rest for a minute. Slice in half and serve with additional Granddam sauce on the side.
