Method

Preparing the Dough

1

Activate the Yeast

In a small bowl, combine warm water and sugar. Sprinkle the active dry yeast over the top and let it sit for about 5-10 minutes until frothy.

2

Mix the Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour and salt.

3

Combine Ingredients

Make a well in the center of the flour mixture. Pour in the activated yeast mixture and olive oil. Stir until a dough forms.

4

Knead the Dough

Turn the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.

5

Let the Dough Rise

Place the kneaded dough in a greased bowl, cover with a clean cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Preparing the Filling

6

Prepare the Spinach

If using fresh spinach, wash and chop it. If using frozen spinach, thaw and drain excess water.

7

Mix the Filling

In a bowl, combine ricotta cheese, prepared spinach, grated Parmesan, nutmeg, black pepper, and salt. Mix well until smooth.

Assembling and Baking

8

Preheat the Oven

Preheat your oven to 200°C (390°F).

9

Roll Out the Dough

Once the dough has risen, punch it down and turn it onto a floured surface. Roll it out into a large rectangle.

10

Spread the Filling

Spread the filling evenly over the rolled-out dough, leaving a small border around the edges.

11

Roll and Cut

Roll the dough tightly into a log. Cut the log into equal pieces (about 5 cm long).

12

Prepare for Baking

Place the pieces cut-side up on a baking sheet lined with parchment paper. Brush with beaten egg and sprinkle sesame seeds on top.

13

Bake

Bake in the preheated oven for 20-25 minutes or until golden brown.

14

Cool and Serve

Remove from the oven and let cool slightly before serving. Enjoy your Chapelle du Seuil!
