House Pickled Jalapeño & Carrot

Quick pickle

Combine 1/2 cup white vinegar, 1/2 cup water, 1 tablespoon sugar and 1/2 tsp kosher salt in a small saucepan. Bring to a low simmer until sugar dissolves, about 2 minutes, then remove from heat. Place the sliced jalapeños and julienned carrot in a clean jar or bowl and pour the hot pickling liquid over them so they are fully submerged. Let cool to room temperature, then refrigerate for at least 30 minutes (preferably 1 hour) before using. Reserve pickling liquid in fridge for up to 2 weeks.

Cheese Blend & Melt

Make cheese sauce

In a small saucepan over medium-low heat, melt 1 tablespoon unsalted butter. Whisk in 1 teaspoon flour and cook, whisking, for 30 seconds to make a light roux (do not brown). Gradually pour in 1/2 cup whole milk while whisking to avoid lumps. Bring to a gentle simmer and cook until slightly thickened, about 1–2 minutes. Reduce heat to low and stir in the shredded cheddar and monterey jack in 2 additions, stirring until fully melted and smooth. Stir in 1/4 cup Mexican crema or sour cream and 1/4 teaspoon salt; taste and adjust seasoning. Keep sauce warm on the lowest heat, stirring occasionally; if it thickens too much, add 1–2 tablespoons milk to loosen.

Assemble Nachos

Layer chips & cheese

Preheat oven to 375°F (190°C). On a large oven-proof platter or rimmed baking sheet, spread 8 cups of thick-cut corn tortilla chips in an even single layer with some gentle overlap but not piled high. Spoon or drizzle about two-thirds of the warm cheese sauce over the chips, focusing on even coverage but leaving some chips uncovered for texture. Reserve the rest of the cheese for finishing.

Bake to meld

Place the tray in the preheated oven and bake for 5–7 minutes until the cheese is bubbly and beginning to set. Remove from oven carefully.

Top with pickles & fresh items

Scatter the pickled jalapeño and carrot mixture over the hot, cheesy chips (use the amount to taste; start with 1/3 cup and add more if desired). Evenly distribute 1 cup diced tomatoes and 1/2 cup sliced green onions over the nachos.

Finish with sauce & garnish

Drizzle the remaining warm cheese sauce wherever needed for extra coverage. Spoon 1/4 cup Peruvian chili sauce (aji amarillo) in thin lines or small dollops across the nachos to provide bright, fruity heat. Sprinkle chopped cilantro if using and serve immediately with lime wedges on the side to squeeze over at the table.
