Prepare the Shortcake

Make the Dough

Preheat the oven to 425°F (220°C). In a large bowl, whisk together flour, sugar, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the heavy cream just until combined.

Shape and Bake

Turn the dough out onto a floured surface and gently knead it a few times. Pat it into a 1-inch thick round. Cut into wedges or rounds and place on a baking sheet. Bake for 15-20 minutes or until golden.

Prepare the Apricot Filling

Mix the Filling

In a bowl, combine the sliced apricots, honey, Lillet Blanc, and lemon juice. Toss gently to coat and let it sit for about 10 minutes to allow the flavors to meld.

Prepare the Green Tea Whipped Cream

Whip the Cream

In a medium bowl, beat the heavy cream, powdered sugar, and green tea powder until soft peaks form. Be careful not to over-whip.

Assemble the Shortcake

Layer the Ingredients

Cut the baked shortcakes in half. Spoon the apricot filling onto the bottom half, add a dollop of green tea whipped cream, then place the top half back on. Serve immediately.
