Prep and marinate fish

Pat the fish fillets dry and cut into 1–1.5-inch wide strips. In a bowl, whisk together 2 tbs olive oil, 2 tbs lime juice, 1 tsp minced garlic, 1 tsp cumin, 1 tsp smoked paprika, 1 tsp chili powder, 1 tsp kosher salt and 1 tsp black pepper. Add the fish pieces, toss to coat, cover and refrigerate for 15–30 minutes (no more than 45 minutes) to absorb flavor.

Cook the fish

Heat a large skillet over medium-high heat and add 1 tbs oil. When shimmering, add fish in a single layer (do not crowd; cook in batches if needed). Sear for 2–3 minutes per side, spooning pan juices over the pieces, until opaque and flakey (internal temp about 145°F/63°C). Remove to a plate and keep warm.

Cabbage Slaw

Make slaw

In a large bowl combine 2 cups green cabbage, 1 cup red cabbage and 1 cup chopped cilantro. In a smaller bowl whisk together 2 tbs lime juice, 3 tbs mayonnaise, 2 tbs Greek yogurt, 1 tsp honey, 1 tsp salt and 1/2 tsp black pepper. Pour dressing over cabbage mixture and toss until evenly coated. Taste and adjust salt or lime as needed. Let sit 10 minutes for flavors to meld.

Creamy Chipotle Sauce

Prepare sauce

Whisk together 1/2 cup sour cream, 2 tbs mayonnaise, 1 tsp minced chipotle in adobo and 1 tsp adobo sauce, 1 tbs lime juice and 1/4 tsp salt until smooth. Taste and add more adobo for heat if desired. Refrigerate until ready to assemble.

Warm tortillas

Warm tortillas by heating briefly in a dry skillet over medium heat (about 20–30 seconds per side) or wrap in a damp paper towel and microwave 20–30 seconds until pliable.

Assemble tacos

To build each taco: place one warm tortilla on a plate, spoon 2–3 tablespoons of cabbage slaw down the center, add 2–3 pieces of cooked fish, drizzle 1–2 teaspoons of creamy chipotle sauce, add a few slices of avocado and a sprinkle of cotija if using. Serve with lime wedges alongside for squeezing.

Serve

Serve immediately while fish is warm. Leftovers: store fish and sauces separately in airtight containers in the refrigerator for up to 2 days; reheat fish gently in a skillet.
