Combine dry ingredients
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and fine salt until evenly combined and aerated.

Whisk wet ingredients
In a separate bowl or large measuring cup, beat the large egg lightly, then whisk in the whole milk, melted butter, and vanilla extract until smooth.

Make a well in the center of the dry ingredients and pour the wet mixture in. Gently fold with a spatula or wooden spoon just until combined. The batter should be slightly lumpy — do not overmix to keep pancakes tender. Let the batter rest for 5 minutes while you preheat the pan.

Cook pancakes
For each pancake, pour about 1/4 cup of batter onto the hot skillet. If using chocolate chips or sprinkles, sprinkle them onto the pancake immediately. Cook until bubbles form across the surface and edges look set, about 1.5–2 minutes. Flip and cook the other side until golden, another 1–1.5 minutes. Transfer cooked pancakes to a warm plate and keep loosely covered while you cook remaining batter, adding more butter to the pan as needed.

Prepare fruit and toppings
While pancakes cook, slice strawberries and banana. If using Greek yogurt instead of whipped cream, stir it smooth. Warm the maple syrup gently in a small saucepan or microwave for 20–30 seconds if preferred.

Assemble pancakes: stack 2–3 pancakes per child on plates. Layer a spoonful of Greek yogurt or whipped cream between or on top of pancakes, then add sliced strawberries and banana. Drizzle with maple syrup and dust with powdered sugar if using. For extra fun, add sprinkles or chocolate chips to the top.

Serve immediately while warm. Leftover pancakes can be cooled completely, then stacked with parchment between and stored in an airtight container in the refrigerator for up to 2 days or frozen for up to 1 month. Reheat gently in a toaster, microwave, or warm oven.
