    Prepare the fish

    Pat the Dover sole dry with paper towels. If using whole fish, ensure they are skinned and boned (ask your fishmonger to do this) and leave them whole; if using fillets, lay them skin-side down. Season both sides evenly with salt and freshly ground black pepper.

    Dust with flour

    Place the flour in a shallow plate. Lightly dredge each side of the fish in the flour, shaking off any excess. The flour should create a light, even coating—enough to help the exterior brown but not so much it becomes pasty.

    Heat pan and brown fish

    In a large sauté pan over medium-high heat, add the olive oil and 2 tablespoons of the butter. When the butter foams and the oil shimmers (about 1–2 minutes), add the fish. For whole soles, cook 3–4 minutes per side; for fillets, cook 2–3 minutes per side, until the exterior is golden brown and the flesh is opaque and flakes easily. Use a spatula to turn gently to avoid tearing. Transfer the cooked fish to a warm plate and tent with foil.

    Make the meunière sauce (beurre noisette style)

    Wipe the pan lightly if there are large stuck bits but do not wash it. Return the pan to medium heat and add the remaining 6 tablespoons of butter. Cook the butter, swirling the pan occasionally, until it melts, foams, and then turns a deep golden-brown and develops a nutty aroma (beurre noisette). Watch carefully—it can go from browned to burned quickly. If using capers, add them to the butter for the last 30 seconds to warm and crisp slightly.

    Finish the sauce

    Remove the pan from heat and immediately stir in the fresh lemon juice and half of the chopped parsley. Taste and, if needed, add a small pinch of salt (remember the fish and capers may already be salty).

    Plate and serve

    Place each fish on warmed plates. Spoon the hot meunière sauce and any capers over the fish. Sprinkle remaining parsley over the top and garnish with thin lemon slices. Serve immediately.

Aromatics & garnish

    If you like, add a few extra drops of lemon at the table. For an elegant presentation, cut the lemon into thin rounds or half-moons and place alongside the fish. Serve with simple sides such as buttered new potatoes or sautéed greens.
