Method

Chill glass
Place a large wine glass or rocks glass in the freezer or fill it with ice water while you prepare the ingredients to chill it for at least 5 minutes.

Build the cocktail
Add several fresh ice cubes to the chilled glass until about two-thirds full.

Pour spirits and juice
Measure and pour 3 tbs Aperol and 1 tbs gin (or dry vermouth) over the ice, then add 30 ml fresh orange juice.

Top and finish
Slowly add 90 ml chilled Prosecco, then 30 ml chilled soda water. Gently stir once or twice with a bar spoon to combine without flattening the bubbles.

Garnish
Slip an orange slice on the rim or float it in the drink. Serve immediately.

Arrange items on a small board or platter. Place the cured olives in a small bowl and scatter roasted almonds nearby.

Fan the prosciutto and salami in loose folds so guests can pick easily. Lay cheese shards in a separate pile and tuck crostini or crackers alongside.

Drain marinated artichoke hearts and place them in a small dish on the board. Keep high-salt items (olives, cured meats) separated from crackers to avoid sogginess.

Bring the board to the table at the same time as the chilled Aperitivo cocktail. Refill ice in the glass if needed between rounds.
