Prepare crab
If using imitation crab, finely chop or shred the 7 oz so it’s in small pieces. If using lump crab, pick through to remove shells and shred lightly.
Soften cream cheese
Ensure 8 oz cream cheese is at room temperature so it blends smoothly. If cold, microwave in 5–8 second bursts until pliable.
In a medium bowl, combine chopped crab, softened cream cheese, 2 Tbsp finely chopped green onions, 1 Tbsp chopped cilantro, 1 tsp soy sauce, 1/2 tsp sesame oil, 1/2 tsp lime juice, 1/4 tsp white pepper, 1/4 tsp sugar, and 1/8 tsp garlic powder. Mix thoroughly until homogeneous and smooth. Taste and adjust seasoning (add a touch more soy or lime if needed).
Wrappers & Assembly
Set up an assembly station: a small bowl with beaten egg (or 2 Tbsp cold water) for sealing, a cutting board or tray dusted lightly with cornstarch (optional) to prevent sticking, and the bowl with filling.
Portion filling
Spoon about 1 teaspoon of filling into the center of each wonton wrapper. For a slightly larger Rangoon use up to 1 1/4 teaspoons. Do not overfill – excess filling will leak during frying.
Seal (classic triangle)
Method A - Triangle: Lightly brush the edges of the wrapper with beaten egg (or dab with water). Fold wrapper into a triangle, pressing edges to seal completely, ensuring no air pockets. Optionally press corners to form the classic plump crab Rangoon shape. Method B - Purse/flower: Gather opposite corners toward the center, brush with a little egg, pinch closed to form a small purse. Both shapes will fry well.
Place assembled Rangoons on a parchment-lined tray in a single layer. If not frying immediately, cover loosely with plastic wrap and refrigerate up to 2 hours.
Frying
Pour about 1 L (or enough) vegetable oil into a heavy-bottomed pot or deep fryer to reach a depth of about 2–3 inches. Heat the oil to 350°F (175°C). If you don’t have a thermometer, test with a small piece of wrapper—the oil should bubble steadily and golden in about 30–45 seconds.
Fry in small batches (6–8 at a time depending on pot size) so the oil temperature remains steady. Gently lower Rangoons into the hot oil with a slotted spoon or spider, taking care to avoid splatter.
Fry 1 1/2–2 1/2 minutes, turning once, until golden brown and crisp. Keep an eye for color: they go from pale to golden quickly. Remove with a slotted spoon and transfer to a wire rack or paper towel–lined tray to drain excess oil.
Repeat with remaining Rangoons, allowing oil to return to temperature between batches. If you prefer a lighter result, you can shallow-fry in 1/4 inch oil, turning frequently, but deep-frying yields the crispiest texture.
Serving
Serve warm. Arrange Crab Meat Rangoon on a platter with sweet chili sauce and optional soy sauce for dipping. They are best eaten within 30 minutes of frying for optimal crispness.
Storage: Refrigerate leftover unfried assembled Rangoons up to 24 hours. Cooked Rangoons will keep in an airtight container in the refrigerator for 2–3 days; reheat in a 375°F (190°C) oven for 8–10 minutes to re-crisp.
