Prepare crab

If using lump crab, pick through to remove shells and shred or chop into small pieces. If using imitation crab, finely chop into small bite-sized pieces; measure 8 oz.

In a medium mixing bowl, combine the softened cream cheese and chopped crab. Use a fork to mash until smooth and evenly mixed.

Add the sliced green onion, soy sauce, sesame oil, Worcestershire sauce, minced garlic, white pepper, sugar, and optional lime/lemon juice to the bowl. Stir until all ingredients are incorporated and the mixture is spreadable but not too loose.

Taste and adjust seasoning: add a touch more soy sauce for saltiness, a pinch more sugar if it needs balance, or more lime for brightness. Cover and refrigerate for 15–20 minutes to firm slightly (this makes filling and sealing easier).

Wrappers & Frying

Prepare sealing glue by mixing 2 tsp all-purpose flour with 2 tsp water in a small bowl until smooth. This paste will act as the glue for the wonton edges.

Lay out a wonton wrapper on a clean, dry work surface with one corner pointing toward you (diamond orientation). Keep remaining wrappers covered with a slightly damp towel to prevent drying.

Place about 1 rounded teaspoon of the crab filling in the center of the wrapper. For a larger, more flavorful Rangoon, use up to 1.5 teaspoons. Do not overfill—excess filling will make sealing difficult.

Brush the edges of the wrapper lightly with the flour-water paste. Fold the bottom corner up over the filling to meet the top corner, forming a triangle. Press edges firmly to seal, expelling air pockets.

Option A — Classic purse shape: Bring the two side corners of the triangle together above the filling, overlapping slightly, and press to seal into a small purse or 'pillow.' Use a dab of paste to hold corners together. Repeat for remaining wrappers to make 7 pieces.

Heat 1.5–2 inches of vegetable oil in a heavy skillet or pot over medium-high heat to 350°F (175°C). If you don't have a thermometer, heat until a small piece of wrapper sizzles and browns within ~10–15 seconds. Maintain steady heat; do not overcrowd the pan.

Fry the prepared Rangoons in small batches (2–3 at a time) for 1.5–2.5 minutes per side, turning once, until golden brown and crisp. Total frying time depends on size and oil temperature. Use a slotted spoon to remove and drain on a wire rack or paper towels. Let cool slightly before serving—the filling will be hot.

Dipping Sauce (optional)

While frying, combine the sweet chili sauce, soy sauce, and rice vinegar in a small bowl. Stir to combine and sprinkle with toasted sesame seeds if using. Transfer to a serving dish.
