Prepare roll

Slice the hero roll horizontally, keeping a hinge if you like. Lightly brush the cut interior of both halves with the olive oil to prevent sogginess and to add flavor.

Mix the mayonnaise and Dijon mustard in a small bowl until smooth. Spread the mixture evenly on the bottom half of the roll; if you like more tang, spread a thin layer on the top half as well.

Arrange the provolone slices on the bottom half of the roll over the mayo/mustard. Layer the meats on top of the cheese: first half the prosciutto, then the salami, then the capocollo (gabagool). Fan them slightly so the sandwich has even coverage and a good meat-to-bite ratio.

If you prefer the cheese slightly melted, place the open sandwich under a preheated broiler for 30–60 seconds until cheese softens (watch carefully). Otherwise continue assembling cold.

Scatter the roasted red pepper strips evenly over the meats. Add the sliced tomatoes and red onion rings in a single layer so the sandwich isn't too watery in one spot. Distribute the pepperoncini/banana pepper slices for brightness and mild heat.
