    Prepare chosen meat

    Select one meat option. For bacon or turkey bacon: place strips in a cold skillet, turn heat to medium, cook 5–8 minutes turning occasionally until crisp to your liking; transfer to paper towel. For sausage links: heat a skillet over medium, add links, cook 10–12 minutes turning frequently until internal temperature reaches 160°F/71°C; drain. For ham steak: heat 1 teaspoon oil or butter in a skillet over medium-high and cook ham 2–3 minutes per side until browned and warmed through.

    Cook the eggs (sunny-side or over-easy)

    Heat a nonstick skillet over medium-low and add 1 tablespoon butter. When butter is foaming, crack two eggs into a small bowl to check for shells, then gently slide into the skillet. Season with 1/8 teaspoon black pepper and 1/8 teaspoon salt. For sunny-side up: cook 2–3 minutes until whites are set but yolks still runny. For over-easy: cook 2 minutes until whites are set, gently flip with a spatula, cook 15–30 seconds more for runny yolks. For over-medium/firm: cook 45–60 seconds after flipping for a partially/fully set yolk. Remove eggs to plate and keep warm.

Potatoes

    Home fries from fresh potato

    If using a fresh russet potato: peel if desired and cut into 1/2-inch dice. Rinse and dry pieces. Heat a separate skillet over medium-high with 1 tablespoon oil. Add diced potato, 1/4 teaspoon salt, and cook, stirring occasionally, 10–12 minutes until golden and tender. Optionally add 1/4 cup chopped onion in the last 5 minutes. Keep warm.

    Frozen hash browns

    If using frozen hash browns: heat 1 tablespoon oil or butter in a skillet over medium. Add 3/4 cup frozen shredded potatoes in an even layer. Cook 4–6 minutes without stirring to brown, then flip portions and cook another 3–4 minutes until crisp and cooked through. Season with 1/8 teaspoon salt and keep warm.

Bread & Serving

    Toast bread

    Toast two slices of bread, or an English muffin or bagel half, to desired doneness in a toaster or on a skillet. Spread a light pat of butter if desired.

    Assemble and garnish

    Place two eggs on a plate with the cooked meat portion and potatoes. Add the toast or chosen bread. Serve with ketchup or hot sauce on the side and sprinkle eggs with chopped chives if using. Adjust salt and pepper to taste.
