Method

Waffle Batter

  1. 1

    Preheat

Preheat your waffle iron according to manufacturer instructions so it reaches medium-high temperature. Lightly grease the plates with a little melted butter or nonstick spray.

  2. 2

    Dry ingredients

In a large bowl whisk together the all-purpose flour, malted milk powder, granulated sugar, baking powder, and salt until evenly combined and free of lumps.

  3. 3

    Wet ingredients

In a separate bowl or large measuring cup whisk the egg lightly. Add the milk, melted butter, and vanilla extract and whisk until smooth.

  4. 4

    Combine batter

Make a well in the dry ingredients and pour in the wet mixture. Gently stir with a spatula or whisk just until combined. Do not overmix; a few small lumps are fine. The batter should be pourable but slightly thick. If too thick, add up to 2 tablespoons more milk.

  5. 5

    Rest (optional)

Let the batter rest 5 minutes at room temperature to allow the malted powder to hydrate and the baking powder to start activating. This improves texture.

  6. 6

    Cook waffles

Spoon or pour the recommended amount of batter into the preheated waffle iron (typically 1/2 to 3/4 cup for a standard iron). Close the lid and cook until the waffle is golden brown and crisp, about 4–5 minutes, or until the steam decreases and the waffle releases easily. Cook time will vary by waffle iron. Repeat with remaining batter, re-greasing the iron if needed.

  7. 7

    Keep warm

If making multiple waffles, keep finished waffles warm on a wire rack set over a baking sheet in a 200°F (95°C) oven so they stay crisp while you finish cooking the rest.

To Serve

  1. 8

Place one hot malted waffle on a plate. Top with a tablespoon of unsalted butter so it melts into the hot waffle.

  2. 9

Drizzle about 1/4 to 1/2 cup pure maple syrup over the waffle, or serve the syrup on the side.

  3. 10

If adding the optional strawberries in sauce, spoon 1 cup of warm strawberries over or beside the waffle. The fruit adds acidity and sweetness that complements the malted flavor.

  4. 11

Serve immediately so the waffle remains crisp. Offer extra butter and syrup at the table as desired.
