Jerk Marinade & Chicken
Prep wings
Pat the chicken wings dry with paper towels. If whole wings have tips, remove tips and separate drums and flats if desired. Lightly score the skin on the thicker parts to help marinade penetrate.
Make jerk marinade
In a blender or food processor combine scallions, thyme leaves, garlic, ginger, habanero (start with half if unsure), soy sauce, lime juice, brown sugar, pimento (allspice), cinnamon, nutmeg, sea salt, black pepper and 2 tsp vegetable oil. Purée until smooth. Taste carefully and adjust heat, salt, or sweetness as desired.
Marinate
Place wings in a large bowl or resealable bag. Pour the jerk marinade over the wings, toss to coat thoroughly so the marinade gets into scored areas. Refrigerate and marinate at least 2 hours, preferably 4–8 hours or up to overnight for best flavor.
Grilling / Roasting & Burnt Lime Glaze
Bring to room temperature
Remove the wings from the refrigerator 20–30 minutes before cooking to take the chill off; reserve marinade in the bowl and cover.
Prepare grill or oven
For grill: preheat to medium-high (about 400°F/200°C) and oil the grates. For oven: preheat to 425°F (220°C) and line a baking sheet with foil and a wire rack; brush rack with oil.
Cook wings
Grill: place wings skin-side down and cook 10–12 minutes, flip and cook another 8–10 minutes, moving to indirect heat if charring too quickly. Oven: place wings on the rack and roast 25–30 minutes, flipping halfway, until skin is crisp and internal temperature reaches 165°F (74°C).
Make burnt lime glaze
While wings cook, melt butter in a small skillet over medium heat. Add honey and 1 tsp soy sauce and stir. Add the reserved marinade strained through a fine sieve (about 1–2 tbs) or a small pinch of fresh minced pepper if you like extra heat. Squeeze the juice from the two halved limes into the pan and stir. Continue to cook 2–3 minutes until slightly thickened. Keep warm but do not boil aggressively.
Burn the lime halves
When wings are nearly done, place the lime halves cut-side down directly on the hot grill grates or on a hot skillet. Press down gently and char for 1–2 minutes until the cut surface is nicely browned and fragrant. This mellows acidity and adds smoky caramelized notes. Remove and reserve for serving.
Glaze and finish
Move cooked wings to a large bowl. Pour most of the warm burnt lime glaze over the wings and toss to coat evenly. Reserve a small amount for serving. Return glazed wings to the grill or oven for 1–2 minutes to set the glaze and produce a slight char (watch closely so glaze doesn't burn).
Rest
Let wings rest 3–5 minutes to let juices redistribute and glaze set.
Plating & Garnish
Arrange wings on a serving platter. Spoon the reserved glaze over any spots that need shine. Place the charred lime halves on the platter; when serving, squeeze burnt lime over the wings for extra smoky-lime brightness.
Sprinkle chopped cilantro or parsley and flaky sea salt over the wings. Serve immediately with extra lime halves and, optionally, a cooling dip like yogurt or sour cream mixed with a little lime and salt.
