Prepare Marinade

In a food processor or high-speed blender, combine the thyme, chopped scallions, garlic, ginger, allspice, cinnamon, nutmeg, scotch bonnet peppers, soy sauce, brown sugar, dark rum (if using), lime juice, vegetable oil, salt, and black pepper. Pulse until you have a coarse, well-blended paste. Scrape down the sides as needed—mixture should be spreadable but not watery.

Taste and Adjust

Taste a small bit of the marinade (careful: spicy). Adjust seasoning with more salt, lime juice, or sugar if needed. If you want milder heat, add a splash more lime juice or a little extra brown sugar.

Prep Wings

Pat the wings dry with paper towels. Toss wings with baking powder and coarse salt in a large bowl to evenly coat—this helps create a crisp skin during roasting/grilling.

Marinate

Place wings in a large resealable bag or a shallow dish. Pour about two-thirds of the jerk marinade over the wings, reserving one-third for basting and finishing. Massage the marinade into the wings to coat thoroughly. Seal and refrigerate for at least 4 hours, preferably overnight for best flavor.

Bring to Room Temp

Remove wings from the fridge 30 minutes before cooking to come to room temperature. Preheat your oven to 425°F (220°C) if roasting, or preheat a grill to medium-high for grilling.

Cook the Wings (Oven Method)

Line a baking sheet with foil and place a wire rack on top. Arrange wings in a single layer on the rack. Roast in the preheated oven for 25 minutes, then baste with 1/2 of the reserved marinade. Flip wings and continue roasting another 10–15 minutes until skin is deep golden brown and internal temperature reaches 165°F (74°C). For extra crispness, finish under the broiler 1–2 minutes per side—watch closely to avoid burning.

Cook the Wings (Grill Method)

Place wings over indirect heat first for 10–12 minutes to cook through, then move to direct heat to crisp and char about 3–5 minutes per side. During the last 5–7 minutes of cooking, baste wings with reserved marinade and allow sugars to caramelize, turning frequently to avoid burning. Ensure internal temperature is 165°F (74°C).

Prepare Limes

Cut each lime in half crosswise. If you prefer a quick caramelized finish, sprinkle the cut faces lightly with the optional sugar.

Burnt Lime Technique

Heat a heavy skillet or cast-iron pan over medium-high heat until very hot. Place lime halves cut side down in the dry pan and press lightly. Let them char 1–2 minutes until the edges and surface are darkened and aromatic. If using sugar, it will caramelize and create a glossy, burnt-citrus surface. Optionally, add 1/4 tsp butter to the pan and swirl to glaze the limes briefly. Repeat for all 3 limes.

Finish

Remove limes from the pan. The burnt lime halves are for squeezing over the finished wings to add smoky, bright acidity. Reserve one burnt lime per 4–6 wings; since the recipe lists 3 limes, they will be enough to finish the batch.

Finishing & Serving

Final Baste and Rest

When wings are cooked, brush them with the remaining reserved jerk marinade and let rest 5 minutes on the rack so juices redistribute and glaze sets slightly.

Plate and Garnish

Arrange wings on a platter. Squeeze the burnt lime halves (use all three across the platter) evenly over the wings to impart smoky-citrus brightness. Sprinkle chopped cilantro or scallions and serve with extra lime wedges on the side.

Serving Suggestion

Serve immediately while hot and slightly charred. These wings pair well with cooling yogurt dip, mango salsa, or a crisp beer. Leftovers keep refrigerated up to 2 days; reheat in a 400°F (200°C) oven for 8–10 minutes to re-crisp.
