Bring water to boil
Place 6 cups of water and 1 tablespoon kosher salt in a medium pot. Bring to a rolling boil over high heat.
Cook edamame
Add 1 cup frozen edamame in pods to the boiling water. Return to a boil, then reduce heat slightly to maintain a gentle rolling boil. Cook for 3 to 5 minutes until pods are bright green and tender-crisp. For firmer pods cook ~3 minutes; for softer pods cook up to 5 minutes.
Drain and shock
Drain the edamame in a colander and immediately rinse briefly under cold running water or transfer to an ice bath for 30–60 seconds to stop cooking and preserve color. Drain well and return to the colander or a bowl to remove excess water.
Finishing & Serving
Season
While the edamame are still slightly warm, transfer to a serving bowl. Drizzle 1 teaspoon toasted sesame oil over them and sprinkle 1 teaspoon coarse sea salt (or to taste) and 1/4 teaspoon freshly ground black pepper. If you like heat, add 1/2 teaspoon chili garlic sauce or a pinch of crushed red pepper and toss or shake the bowl to distribute seasonings evenly.
Serve
Serve immediately with lemon or lime wedges on the side if desired. To eat, squeeze or pop the beans from the pod directly into your mouth — do not eat the pods.
