Method
Marinated Chicken
Prep chicken
Trim excess fat from the chicken thighs and cut into 1–1.25 inch cubes. Pat pieces dry with paper towels.
Make marinade
In a medium bowl combine soy sauce, rice vinegar, honey, sesame oil, minced garlic, grated ginger, chili flakes, salt and black pepper. Whisk until honey dissolves and mixture is uniform.
Add the chicken cubes to the marinade, toss to coat thoroughly. Cover and refrigerate at least 30 minutes and up to 4 hours. If using wooden skewers, soak them in water 20–30 minutes while chicken marinates to prevent burning.

Preheat and prepare
Heat oven to 425°F (220°C) if finishing in oven, or heat a large skillet or grill over medium-high heat. If using panko for a crisp coating, spread panko on a plate.
Assemble skewers
Thread 3–4 chicken cubes onto each skewer, leaving a little space between pieces so heat circulates. If using panko, lightly press each marinated cube into the panko to coat all sides before skewering, or brush skewers with oil and roll in panko.
Cook
Option A — Grill: Oil grill grates lightly and grill skewers 3–4 minutes per side until charred at edges and internal temperature reaches 165°F (74°C). Option B — Skillet: Add 1–2 tbs oil to a large skillet over medium-high heat and cook skewers 3–4 minutes per side until golden and cooked through. Option C — Oven: Place skewers on a foil-lined baking sheet and roast 10–12 minutes, turning once halfway, then broil 1–2 minutes to caramelize if desired. Adjust time if pieces are larger.
If you used panko and want extra crispness, finish under broiler for 1–2 minutes watching closely to avoid burning.
Garnish & Dipping Sauce
Arrange cooked skewers on a platter. Sprinkle with sliced green onions, toasted sesame seeds and cilantro if using. Serve lime wedges on the side for squeezing over the skewers.
Serve with sauce
Serve the skewers with about 1/2 cup of sweet chili or your preferred dipping sauce. For a quick homemade dipping sauce, combine 1/4 cup sweet chili sauce, 1 tbs soy sauce, 1 tbs rice vinegar and 1 tsp sesame oil; stir and taste, adjusting sweetness or heat as desired.
