Method
Potatoes
- 1
Par-cook potatoes
Place the 1/2-inch cubed potatoes into a pot and cover with cold water. Add a pinch of salt and bring to a boil. Boil for 4 minutes until just tender but still holding shape. Drain and spread on a towel to dry completely (about 10–15 minutes). Drying is important so cubes don't steam off batter.
- 2
Fry potatoes until crisp
Heat 1 cup canola oil in a heavy skillet over medium-high heat until it reaches 350°F (if you have a thermometer) or shimmering. Add the dried potato cubes in a single layer (work in batches if needed). Fry, stirring occasionally, until edges are golden and crisp, about 5–7 minutes. Remove to a paper towel-lined tray and immediately season with 1 tsp kosher salt and 1 tsp black pepper. Let cool to room temperature (10 minutes). These crisped cubes will adhere to the batter.
Hot Dogs and Assembly
- 3
Prepare hot dogs
Pat hot dogs dry with paper towels. Insert a wooden skewer into each hot dog lengthwise leaving about 3–4 inches of skewer exposed as a handle. Lightly roll each hot dog in 1 tablespoon flour to help batter stick. Shake off excess flour.
- 4
Apply potato cubes
Working with one hot dog at a time, press the cooled crisp potato cubes onto the floured hot dog, covering the surface evenly. Use gentle pressure so cubes adhere but don’t fall apart. If needed, secure a few cubes with small dabs of batter (see next section) during dunking.
Batter (Corn Dog Style)
- 5
Make the batter
In a large bowl whisk together 1 cup all-purpose flour, 1 cup cornmeal, 2 tbs sugar, 1 tbs baking powder, and 1 tsp kosher salt. In a separate bowl whisk the egg, 1 cup milk, and 2 tbs vegetable oil. Pour the wet into the dry and stir until just combined; the batter should be thick enough to coat a hot dog (similar to pancake batter). If too thick, add 1–2 tbs milk; if too thin, add 1–2 tbs flour.
- 6
Chill batter briefly
For best adhesion, let the batter rest in the fridge for 10 minutes so it thickens slightly.
Frying
- 7
Heat oil
Pour 4 cups frying oil into a deep skillet or pot to a depth of about 2 inches. Heat to 350°F (175°C). If you don’t have a thermometer, test with a small drop of batter — it should sizzle and rise immediately.
- 8
Batter and fry potato dogs
Remove the batter from the fridge and give it a quick stir. Holding the skewer, dip each potato-covered hot dog into the batter, turning to coat all sides. Use a spoon to help cover any gaps if needed. Allow excess batter to drip back into the bowl, then carefully lower the coated Potato Dog into the hot oil. Fry 3–4 at a time (do not overcrowd) for 3–5 minutes, turning as needed, until the batter is golden brown and cooked through. The potato cubes should be crisp and the hot dog heated through.
- 9
Drain
Transfer fried Potato Dogs to a rack or paper towels to drain. Let rest 1–2 minutes so batter firms slightly before serving.
