Cod Piece
Light Seasoning & Finish
Method
Cod Piece
- 1
Prepare the fillet
Pat the cod fillet dry with paper towels. Trim any ragged edges so the piece is an even shape for even cooking.
- 2
Marinade
Place the cod on a plate. Drizzle with 1 tablespoon lemon juice and 1 teaspoon olive oil. Sprinkle evenly with 1 teaspoon sea salt, 1/4 teaspoon black pepper, 1/2 teaspoon minced garlic and 1/4 teaspoon paprika. Let sit at room temperature for 10 minutes (no more than 15) to let flavors penetrate.

- 4
Cook the fillet
Place the cod fillet in the hot skillet presentation-side down. Cook without moving for 3–4 minutes until the bottom is opaque and lightly golden. Gently flip with a spatula and cook the second side 2–4 minutes, depending on thickness, until the fish flakes easily and reaches an internal temperature of 63°C (145°F). Total cook time typically 5–8 minutes for a 1–1.5 inch thick piece.
Finish & Serve

Finish with butter and herbs
Reduce heat to low. Add 1/2 tablespoon unsalted butter to the pan and spoon the melted butter over the fish for 10–20 seconds to glaze. Turn off the heat, sprinkle 1 tablespoon chopped fresh parsley over the fillet.
- 6
Rest and serve
Transfer the cod to a plate and let rest 1–2 minutes. Taste and adjust with a small pinch of salt or an extra squeeze of lemon if desired. Serve as a single add-on portion.
