For the brewed coffee

Method

For the brewed coffee

  1. 1

    Measure beans

Weigh or measure 36 g (about 2 tablespoons by volume per 180 ml) of whole coffee beans for 2 cups (about 500 ml) of brewed coffee. This yields a brew strength around 1:14 ratio (coffee:water by weight). Adjust for taste.

  2. 2

    Grind beans

Grind the beans to the grind size appropriate for your brewing method: medium-coarse for a French press, medium for drip/pour-over, medium-fine for cone filters. Grind immediately before brewing for best flavor.

  3. 3

    Heat water

Bring 500 ml filtered water to 92–96°C (195–205°F). If you don't have a thermometer, bring to a boil and let sit 30–45 seconds before pouring.

  4. 4

    Pre-wet filter (if using paper)

If using a paper filter for pour-over or drip, place it in the dripper and rinse with hot water to remove paper taste and warm the vessel. Discard the rinse water.

  5. 5

    Bloom (for pour-over or drip)

Place the ground coffee in the dripper or filter. Pour just enough hot water (about twice the weight of the coffee, ~72 ml) to saturate the grounds evenly. Let bloom 30–45 seconds to release gases.

  6. 6

Complete pour (for pour-over) / Add water (for French press)

After bloom, slowly pour the remaining hot water in a circular motion until you reach 500 ml total. For drip machines, start the brew cycle and let it complete. For French press, pour all water, stir gently, place the lid with plunger up, and steep 4 minutes.

  7. 7

    Finish and serve

When brewing is complete (pour-over finished dripping, brewing cycle done, or French press plunger ready), transfer coffee to carafe or cups immediately to avoid over-extraction or bitterness from sitting on grounds.

For serving (optional)

  1. 8

    Heat milk (if using)

Warm 60 ml milk or creamer in a small saucepan over low heat or steam with an espresso wand until it reaches 55–65°C (do not boil). Froth if desired.

  2. 9

    Sweeten and flavor

Add sugar, honey, or maple syrup to taste (the recipe lists 1 tsp as a starting point). Stir into the brewed coffee until dissolved. Add warmed milk or creamer if you like milk-based coffee.

  3. 10

    Garnish

Optionally sprinkle a pinch (about 1/4 tsp) of ground cinnamon on top for aroma and flavor.

Cleanup

  1. 11

Discard used grounds or compost them. Rinse and clean the dripper, kettle, grinder, and any other equipment to preserve flavor for next brew.
