Preparation

  1. 1

    Chop Vegetables

Dice the green bell pepper, onion, and tomato into small pieces.

  2. 2

    Prepare Ingredients

Gather all ingredients and have them ready for cooking.

Cooking

  1. 3

    Cook Hash Browns

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the frozen hash browns and cook until they are golden brown and crispy, about 8-10 minutes, stirring occasionally.

  2. 4

    Sauté Vegetables

In the same skillet, add another tablespoon of olive oil. Add the diced green pepper and onion. Sauté for 3-4 minutes until they are softened.

  3. 5

    Add Tomato

Stir in the diced tomato and cook for an additional 2 minutes.

  4. 6

    Combine with Hash Browns

Mix the sautéed vegetables with the hash browns. Season with salt and black pepper. Cook for another 2-3 minutes until all ingredients are heated through.

Eggs

  1. 7

    Scramble Eggs

In a bowl, whisk together the eggs and shredded cheddar cheese. In a separate non-stick skillet, add a little olive oil and heat over medium-low. Pour in the egg mixture and cook, stirring gently, until the eggs are just set and fluffy, about 3-4 minutes.

Assembly

  1. 8

    Toast Bread

While eggs are cooking, toast the bread slices until golden brown.

  2. 9

    Serve

To serve, place a generous portion of the hash brown and vegetable mixture on a plate. Top with the cheddar-scrambled eggs and serve with the toasted bread on the side.
