    Marinate shrimp

    Pat shrimp dry with paper towels. In a bowl combine shrimp, 1/2 tsp kosher salt, 1/4 tsp white pepper, 1 tbs cornstarch, 1 tsp light soy sauce and 1 tsp Shaoxing wine. Toss to coat evenly and let rest 10 minutes while preparing vegetables.

    Cook shrimp

    Heat a large wok or heavy skillet over high heat until hot. Add 2 tablespoons vegetable oil and swirl to coat. Add the marinated shrimp in a single layer and stir-fry 1 to 2 minutes until the undersides turn pink and slightly opaque. Stir and cook another 30–60 seconds until just cooked through (shrimp should be firm and opaque). Transfer shrimp to a bowl and set aside; do not overcook.

    Prepare vegetables

    While shrimp marinates, trim bok choy and snow peas, julienne the carrot, slice shiitake mushrooms, cut green onions into 1-inch pieces and mince garlic and julienne ginger. This ensures quick, even cooking.

    Stir-fry vegetables

    In the same hot wok (add a teaspoon of oil if the pan is dry) add minced garlic and julienned ginger and stir 10–15 seconds until fragrant (do not burn). Add carrots and shiitake mushrooms and stir-fry 1 minute. Add snow peas and baby bok choy and continue stir-frying 1–2 minutes until bok choy stems begin to soften but leaves are still bright. Add the green onions and toss for 20–30 seconds.

    Make sauce

    In a small bowl whisk together 1/2 cup stock, 1 tablespoon oyster sauce, 1 teaspoon light soy sauce and 1/2 teaspoon sesame oil. In a separate small cup mix 1 teaspoon cornstarch with 1 teaspoon cold water to make a slurry.

    Combine and thicken

    Return cooked shrimp to the wok with the vegetables. Stir the sauce once more and pour it into the wok. Bring to a gentle boil and then drizzle in the cornstarch slurry while stirring. Continue stirring for 30–60 seconds until sauce thickens and coats shrimp and vegetables.

    Adjust and serve

    Taste and adjust seasoning: add up to 1/4 tsp more salt or a little more soy if needed. Remove from heat, drizzle with a few drops of sesame oil if desired, toss once, and transfer to a serving platter. Serve immediately over steamed rice or noodles.
