    Cook noodles

    Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until just al dente (usually 3–4 minutes). Drain, rinse briefly under warm water to loosen, then toss with 1 tsp neutral cooking oil to prevent sticking. Set aside.

    Make sauce

    In a small bowl combine 3 tbsp soy sauce, 1 tbsp oyster sauce, 1 tbsp Shaoxing wine, 1 tsp sesame oil, 1 tsp cornstarch and 3 tbsp water. Whisk until smooth and set aside.

Shrimp & Marinade

    Marinate shrimp

    Pat shrimp dry. In a bowl mix shrimp with 1 tsp salt, 1/4 tsp white pepper, 1 egg white and 1 tsp cornstarch. Toss to coat and let rest 10 minutes while preparing other ingredients. The egg white and cornstarch give a light velvety texture when quickly stir-fried.

Vegetables & Aromatics

    Prep aromatics and vegetables

    Mince garlic and ginger, slice scallions into 2-inch pieces separating white and green parts, thinly slice half the onion, julienne the carrot, thinly slice the celery and trim the peas. Rinse and drain bean sprouts. Keep vegetables separate so they can be added to the wok in stages.

    Stir-fry shrimp

    Heat a wok or large skillet over high heat until very hot. Add 1 tbsp vegetable oil and swirl. Add the marinated shrimp in a single layer and stir-fry 1–2 minutes until just pink and mostly cooked through. Remove shrimp to a plate and reserve juices.

    Stir-fry vegetables

    Add the remaining 1 tbsp vegetable oil to the hot wok. Add the white parts of the scallions, garlic and ginger; stir-fry 15–20 seconds until fragrant. Add sliced onion, carrot and celery; stir-fry 1–2 minutes until vegetables begin to soften but are still crisp. Add snow peas and cook 30–45 seconds. Add bean sprouts and toss once.

Combine & Finish

    Return shrimp and add noodles

    Return the cooked shrimp and any accumulated juices to the wok with the vegetables. Add the cooked noodles and pour the prepared sauce over everything.

    Toss and cook

    Using tongs or two spatulas, toss everything vigorously for 1–2 minutes so the sauce evenly coats the noodles and vegetables. If the mixture seems dry, add 1–2 tbsp water or chicken stock. Taste and adjust seasoning with a pinch more salt or soy sauce if needed.

    Finish

    Turn off the heat and drizzle 1/2 tsp sesame oil. Toss in the green parts of the scallions. Transfer to a serving plate and sprinkle with toasted sesame seeds if using. Serve immediately with lime wedges if desired.
