Prep and make sauce
Bring a large pot of water to a boil. If using dried noodles, cook according to package directions until just al dente (usually 4–6 minutes); fresh noodles need 1–2 minutes. Drain and toss immediately with 1 teaspoon sesame oil to prevent sticking and set aside. In a bowl, whisk together 1 cup soy sauce, 2 tablespoons oyster sauce, 1 teaspoon dark soy sauce (if using), 1 teaspoon cornstarch, and 1 tablespoon chicken broth or water until smooth. Taste for balance — it should be savory and slightly sweet-salty. Reserve the sauce.

Marinate protein
Thinly slice 1 lb chicken or pork across the grain into bite-sized strips. In a medium bowl combine 1 tablespoon soy sauce, 1 teaspoon rice wine (or dry sherry), and 1 teaspoon cornstarch. Add the sliced meat and toss to coat thoroughly. Let marinate 10–15 minutes while you prep vegetables.

Cook protein
Heat a wok or large skillet over high heat until nearly smoking. Add 1 tablespoon vegetable oil and swirl. Shake off excess marinade from the meat and spread the slices in a single layer. Let sear without crowding for about 1 minute, then stir-fry until cooked through (about 2–3 minutes total depending on thickness). Remove the cooked meat to a plate and loosely cover to keep warm.

Cook aromatics and vegetables
Using the same wok, lower heat to high-medium and add 2 tablespoons neutral oil. Add the minced garlic and ginger and stir for about 15–20 seconds until fragrant (do not burn). Add sliced onion and carrots; stir-fry 1–2 minutes until they begin to soften. Add snow peas and bok choy or cabbage and continue to stir-fry 1–2 minutes until crisp-tender. If using bean sprouts, add them in the last 30 seconds. Season vegetables with about 1/2 teaspoon salt and 1/2 teaspoon white pepper (adjust later to taste).

Combine noodles, sauce, and protein
Return the cooked protein to the wok with the vegetables. Add the cooked noodles and pour the prepared sauce evenly over everything. Turn heat to high and toss rapidly with tongs or two spatulas to combine; cook 1–2 minutes until sauce thickens and evenly coats noodles and ingredients. If the mixture seems dry, add up to 1–2 tablespoons hot water or broth to loosen.

Final seasoning
Taste and adjust seasoning with additional soy sauce, salt, or white pepper if needed. Drizzle 1 teaspoon sesame oil and toss to combine. Stir in sliced scallions, and if using, add a splash of chili oil or sprinkle toasted sesame seeds. Remove from heat and transfer to a serving platter.
