    Trim and slice chicken

    Trim excess fat from the chicken thighs and thinly slice across the grain into 1/4-inch strips.

    Marinate

    In a bowl combine 1 tbsp light soy sauce, 1 tbsp Shaoxing wine, 1 tsp cornstarch, 1 tsp sesame oil and a pinch of white pepper. Add the sliced chicken and toss until evenly coated. Let rest for at least 15 minutes (or refrigerate up to 1 hour).

Noodles & Sauce

    Cook noodles

    Bring a large pot of salted water to a boil. Cook the egg noodles according to package instructions until just al dente (usually 3–5 minutes for fresh, 6–8 for dried). Drain and rinse briefly with warm water to stop cooking. Toss with 1 tsp oil to prevent sticking and set aside.

    Make sauce

    In a small bowl whisk together 3 tbsp chicken stock, 2 tbsp oyster sauce, 1 tbsp dark soy sauce, 1 tsp light soy sauce, 1 tsp sugar and 1 tsp cornstarch until smooth. Set aside.

    Prep vegetables

    Have garlic minced, ginger minced, onion thinly sliced, carrot julienned, celery sliced on the bias, scallions sliced on the bias, and any peas halved. Drain bean sprouts thoroughly. This mise en place makes stir-frying quick and even.

    Stir-fry vegetables

    Heat a large wok or wide skillet over high heat until very hot. Add 2 tbsp vegetable oil and swirl. Add the sliced onion, carrot and celery and stir-fry 1–2 minutes until they begin to soften but remain crisp. Push vegetables to the sides of the wok.

    Cook chicken

    Add the remaining 1 tbsp vegetable oil to the center of the wok and add the marinated chicken in a single layer. Let sear without moving for 20–30 seconds, then stir-fry 2–3 minutes until the chicken is cooked through and lightly browned. Combine with the vegetables in the wok.

Combine & Finish

    Add aromatics and noodles

    Push the chicken and vegetables to one side of the wok, add the remaining 1 tsp oil to the empty side, then add the garlic and ginger and stir for 15–20 seconds until fragrant. Add the cooked noodles and pour the sauce over the top.

    Toss and season

    Using tongs or two spatulas, toss everything together vigorously so the sauce coats noodles and ingredients evenly. Stir in bean sprouts, snap peas (if using) and sliced scallions. Cook 1–2 minutes more until sauce thickens and everything is heated through. Taste and adjust seasoning with up to 1/2 tsp salt and 1/4 tsp white pepper if needed.

    Drizzle 1 tsp sesame oil over the chow mein, toss once, then transfer to a serving platter. Sprinkle with toasted sesame seeds and serve with lime wedges if desired.
