Grits
Add grits slowly
Once the liquid is warm, reduce heat to low. Slowly sprinkle 1 1/2 cups stone-ground grits into the saucepan while whisking or stirring continuously with a wooden spoon to prevent lumps.
Simmer gently
Increase heat to medium-low and bring the mixture to a very gentle simmer. Cook uncovered, stirring frequently, for 20–30 minutes until the grits are thick, creamy and the grains are tender but not mushy. Stir more often toward the end to prevent scorching. If the grits thicken too much, add up to 1/2 cup hot water or milk to adjust consistency.
Season and enrich
When the grits are tender, remove from heat. Stir in 4 tablespoons unsalted butter, 1 1/2 teaspoons salt, and 1/2 teaspoon freshly ground black pepper until melted and fully incorporated.
Add cheeses
Stir in 1 cup grated sharp cheddar cheese a handful at a time until melted and smooth. Next, add 2 ounces softened cream cheese and stir until fully combined and the grits are glossy and rich. Taste and adjust salt and pepper as needed.
Finishing & Serve
If desired, stir in an extra tablespoon of butter and 1 teaspoon hot sauce for a silky, slightly tangy finish. Spoon grits into warmed bowls.
