Prep Meats & Cheese
Prepare candied bacon
Preheat oven to 400°F (200°C). Line a baking sheet with foil and a wire rack. Sprinkle each bacon slice lightly with 1 tsp brown sugar total (about 1/3 tsp per slice) and a light grind of black pepper. Place bacon on rack and bake 12–15 minutes until crisp and glossy. Remove and let cool slightly, then chop into 1/2-inch pieces.
Cook and warm meats
If chicken is not cooked: season a small chicken breast with salt and pepper and pan-sear over medium-high heat 4–5 minutes per side until internal temp reaches 165°F (74°C). Let rest 5 minutes, then dice to yield 1/2 cup. If sausage is raw: brown 1/3 lb pork sausage in a skillet over medium heat, breaking into small pieces, until cooked through; drain excess fat. If using pre-cooked deli chicken and sausage, warm briefly in skillet just to heat through. Combine chopped candied bacon, diced chicken, and crumbled sausage in a bowl; keep warm.
Shred cheese
Shred white cheddar and measure 3/4 cup. Set aside for quick assembly.
Prepare Side (choose one)
Toast or biscuits: Toast two slices of bread or warm a signature biscuit. Serve with 1 tsp butter.
Make the Omelette
Heat pan: Place a nonstick or well-seasoned 10-inch skillet over medium heat. Add 1 tablespoon unsalted butter and swirl to coat. Let butter foam but not burn.
Cook eggs: Pour the beaten eggs into the skillet. Let set undisturbed for 10–15 seconds, then gently pull the cooked edges toward the center with a spatula while tilting the pan so uncooked egg flows to the edges. Continue until eggs are mostly set but still slightly glossy on top, about 1–2 minutes total.
Add fillings: Spoon the warm meat mixture (candied bacon, diced chicken, crumbled sausage) evenly over one half of the omelette (about 1 cup of filling). Sprinkle the shredded white cheddar (3/4 cup) evenly over the meat.
Fold and finish: Use a spatula to fold the empty half of the omelette over the filled half. Let cook another 30–60 seconds to melt the cheese and finish cooking through. If you prefer a more set interior, cover the pan for 30–45 seconds.
