Sauté vegetables
Heat 1 tablespoon olive oil (and 1 teaspoon butter if using) in a medium skillet over medium heat. Add the minced jalapeños and diced red bell pepper and sauté 2–3 minutes until softened. Add the baby spinach and cook until wilted, about 1–2 minutes. Remove from heat and let cool slightly.
Mix eggs
In a large bowl, whisk together 8 large eggs, 1 cup whole milk, 1 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper until smooth and slightly frothy.
Combine and bake
Stir the cooled sautéed vegetables and 3/4 cup crumbled feta into the egg mixture. Pour into the prepared baking dish and bake at 350°F (175°C) for 18–22 minutes, or until the eggs are just set and a toothpick inserted into the center comes out clean. Do not overbake — the frittata should be tender and slightly moist.
Cool and portion
Allow the baked frittata to cool at room temperature for 10–15 minutes to firm up. Turn out onto a cutting board if desired, then cut into approximately 12–15 bite-sized pieces (target about 5 larger bites if stated portioning aims for 5 servings; adjust size so recipe yields five sizeable bites). Chill in refrigerator for 20–30 minutes to firm further (this helps maintain shape during battering and frying).
Breading / Frying
Prepare fry stations
Set up three shallow bowls: (1) dry mix — combine 1 cup all-purpose flour, 1/4 cup cornstarch, 1/2 teaspoon salt, and 1/4 teaspoon black pepper; (2) wet batter — whisk together 1 cup cold sparkling water with 1 large egg until slightly frothy; (3) breadcrumbs — place 1 cup fine breadcrumbs or panko in the third bowl. Keep everything chilled until ready to coat.
Preheat oil
Pour 3 cups vegetable oil into a deep skillet or pot (oil depth ~1.5–2 inches). Heat oil over medium-high until it reaches 350°F (175°C). If you don't have a thermometer, test with a small breadcrumb — it should sizzle and brown in about 45–60 seconds.
Coat frittata pieces
Working with chilled frittata pieces, lightly dredge each piece in the dry flour mixture, shaking off excess. Dip into the cold sparkling water batter, allowing excess to drip, then press into breadcrumbs to fully coat. For an extra-crisp finish, double-dip by returning to batter and breadcrumbs again. Place coated pieces on a wire rack while you finish coating the rest.
Fry until golden
Once oil is at 350°F (175°C), fry the coated frittata bites in small batches (do not overcrowd) for 2.5–3.5 minutes, turning once, until golden brown and crisp. Maintain oil temperature, adjusting heat as needed. Use a slotted spoon to transfer cooked bites to a paper towel–lined tray or wire rack to drain. Let rest 1–2 minutes to finish cooking inside; internal temperature should be at least 165°F (74°C).
Keep warm (optional)
If cooking in multiple batches, keep finished bites warm in a 200°F (95°C) oven on a wire rack placed over a baking sheet while you fry remaining pieces to preserve crispness.
Garnish & serving
Arrange the golden jalapeño frittata bites on a serving platter. Sprinkle with 2 tablespoons chopped fresh cilantro and a light dusting of extra crumbled feta if desired. Serve with lime wedges and optional hot sauce or crema for dipping. Serve immediately while hot and crisp.
