Method

Cut and season
Cut the salmon into 5 even bite-sized pieces (about 1.5–2 oz each). Pat dry with paper towels. Place in a bowl and toss with kosher salt, black pepper, lemon juice, and the house spice mix until evenly coated. Let rest 5–10 minutes in the refrigerator while you prepare the batter.
Batter & Coating
Make the batter
In a medium bowl whisk together the flour, cornstarch, baking powder and 1/4 tsp salt. Combine the cold sparkling water and beaten egg, then gently whisk into the dry ingredients until just combined. Batter should be slightly thick but still pourable; if too thick add up to 1–2 tbsp more sparkling water. Keep batter chilled until ready to use.

Working in a single layer, dredge each seasoned salmon piece lightly in a dusting of flour (optional to help batter adhere), then dip into the chilled batter to coat fully. Carefully place pieces into the hot oil, frying in batches if needed to avoid crowding. Fry 2–3 minutes per side until the batter is golden and the interior reaches 125–130°F for medium-rare to medium (carryover heat will raise it slightly). Adjust time for smaller or larger pieces. Remove with a slotted spoon to a wire rack or paper towel-lined plate to drain.
Honey Hot Sauce
Make the sauce
In a small bowl combine honey, hot sauce, soy sauce, rice vinegar, minced garlic and red pepper flakes. Whisk until smooth. Taste and adjust heat/sweetness — add a little more hot sauce for spice or more honey to mellow. If you prefer a thinner sauce, whisk in 1 tsp warm water.

Assemble and serve
Arrange the mixed salad greens on a small plate or shallow bowl. Nestle the 5 sauced salmon bites on top of the greens. Sprinkle sliced green onions and toasted sesame seeds over the salmon. Serve immediately with lemon wedges on the side for squeezing.
